Beef Short Ribs 7/8/17

Finally picked up a couple of slabs of beef short ribs from Restaurant Depot. Choice Grade, really well marbled.

I liked to think I have fairly large hands at 6'2" 275lbs, but these ribs made them look smallish haha.

Seasoned up with Oakridge Black Ops. First time I have used it.

Hit the smoke at noon running about 275* with cherry wood.

3 hours in, have a great color. Loved how the bones are coming in on the bottom rack...I named him "Fang" haha.

Finished. Taste was awesome, and incredibly tender. If anything, I maybe went a tad too long. Regardless they turned out awesome.

Looks fantastic! I think I am starting to come to the conclusion that I like beef ribs even better than brisket (after all, they have a built in handle!) :)

It's a red performer. I'll tell you what though, when it heats up or is in the sun, I swear it turns colors to a deep dark red almost burgundy color!
When I have the charcoal against the side of my red kettle, it turns black until the charcoal cools off, then it turns red again. It's a trip
