Bacon, Pork and Smoke

played with fourteen pieces of homemade bacon

took a roll of Bob Evans Pork out of it's wrapper and flatten it

sautéed some mushrooms and some scallions, tossed on some cheese and it looked like this

carefully rolled the pork with it's stuffing into a log, seem side down on the bacon square

rolled the bacon around the log, wrapped it all in Saran wrap then in the fridge until time to cook

got the 26"OTG dome temp to nearly 400º, and the pork on... probed for a temp of 160º

also tossed on a few hunks of bacon chunks and a coupla pork balls

a little apple wood beneath everything for smoke...

cooking time was approximately 1 hour 10 minutes

after a 15 minute rest, it was sliced...

and served with oven roasted Brussels sprouts and cast iron skillet baked Yukons

and it was every bit as good as you can imagine. Will make this again very soon!

I'm voting for Maddie's idea, once I started on that it would be real hard to stop. Great cook Jim!
 
Just drooled on my iPad. Great looking cook, how do you do the oven roasted Brussels? They look good. Never made a fattie but now I want too
 
Fantastic looking fattie Jim, I haven't made one in so long I've forgotten what they taste like, ...do you deliver, it's 82° and sunny here.
