First up, bacon wrapped water chestnuts for a NYE snack.

Last Sunday I finally dug out of the garage a patched up bag of charcoal purchased in March, 2011.

Rolled a slab of baby backs, rubbed with SYD rub, and fired up the baby WSM with above charcoal.
Four rather large chunks of apple wood for smoke.

First check two hours in running 250 dome.

Cut in half and sauced after 3 hours, then cooked another hour.
Rested before slicing.

Tender, juicy and bite off the bone.
Un-enhanced Farmland ribs, but they almost looked cured, didn't taste that way though.
Rub was put on right before going on the smoker.

The charcoal worked just fine, but 40 lb bags are rough lifting to pour out for this old guy. They need a handle on the bottom of the bag.

Bob, that's a great cook, ribs look great. I know about those 40 lb. bags can't do that anymore. I did get a Kingsford charcoal tote and with the handle and grooved bottom it sure is a lot easier with even the 20 lb. bags which fit perfectly inside it.

Yep, I have 2 of those totes, one for grilling stuff, and one for lump, briqs are in a bag stored in the Performer's holder.
I dumped about half the 40 lb bag into an empty Kingsford bag to lighten the load.

Bob I havn't posted on here in over a year but that looks amazing for my first post back on tvwbb. Look at that beautiful smoke ring on those dang ribs.
 
love those ribs! you nailed it! They look juicy!! and the bacon wrapped chestnuts looks amazing. Never had chestnuts before, guess I need to try it :)

Great looking ribs! Bacon wrapped water chestnuts aka Rumaki, have been a favorite appetizer in our family for years! So yummy!

A few pieces of duct tape properly placed can make a quick handle on the bottom of your bag.

Ribs and snacks look great, Bob. I notice a couple extra pieces of bacon on that grill - fuel for the chef?

as for the charcoal... I dump the bag's contents into 5 gal buckets I get from work.
the same 5 gal bucket I put that 'now gone' smoke wood in for you five years ago.
and those water chestnuts... I never did make them this past holiday season... maybe this weekend...?

anyway, AWESOME lookin' ribs bud!
