Angus Brisket Bacon BLT

I was at the Farmers Market yesterday, picking up a tri tip (cook to come later this week) and they had brisket bacon. Maple cured, hickory smoked, beefy goodness. I was working from home today and decided it was a good time to make some good lunch.

I did some really good jerk chicken tonight, but my camera battery died after the first pic. So you'll just have to imagine the bone-in thighs marinated for 24 hours and cooked over cherry.
