A Couple Of Firsts

Did my first cook on my new Performer. I did some baby back ribs using Jim Lampe's HH method.



This is also the first time doing BB's. They came out good and it was a good learning opportunity. The only issue I had is that they were not quite as tender as I would have liked. What I think happened was that I positioned the lid vent over the ribs to direct the smoke over them. This placed the lid thermometer directly over the charcoal so while the lid thermometer read 400 I was actually cooking about 75 degrees less. For a first time with a new grill, first time cooking BB's and using a new method I'm pretty happy. Thank you Mr Lampe for that method. I'll be doing a lot more of it.
 
Looking good, I do Jims HH BBs all the time on my performer. Be careful relying on that dome thermometer mine is about 30* off measured against my maverick at the same location. I use mine more as a guide.
 
Yeah I found that out. I slapped my Maverick on when they didn't appear to be cooking quite as quickly as I thought they should. That's how I found the temp variation. I know better than that and should have had it in from the beginning.
 
Thank you Rolf. That's one of the things I love about BBQ, even the mistakes are pretty tasty.
 
First cooks are always a thrill. Especially when they go well. Good job!

fwiw - you can use a Maverick (or similar) on a kettle. Can't bring myself to slot the bowl on a Performer (why... have no problem on the WSMs?) so I carefully open/close the lid to keep myself from damaging the wires to the probes.
 
Those ribs look delicious, great job on your first BB's and on the Performer. Your going to like it a lot.
 
That slab looks pretty good, Jim is a tough act to follow but he's a BBQ Jedi. Keep em' coming
