Did my first cook on my new Performer. I did some baby back ribs using Jim Lampe's HH method.

This is also the first time doing BB's. They came out good and it was a good learning opportunity. The only issue I had is that they were not quite as tender as I would have liked. What I think happened was that I positioned the lid vent over the ribs to direct the smoke over them. This placed the lid thermometer directly over the charcoal so while the lid thermometer read 400 I was actually cooking about 75 degrees less. For a first time with a new grill, first time cooking BB's and using a new method I'm pretty happy. Thank you Mr Lampe for that method. I'll be doing a lot more of it.
