3 Bone Pork Chop

did this very same grillin' back on August 1st for the 3rd Annual TVWBB Grill Fest
...and the Meat Is STILL Gorgeous!
fired up the Weber Performer for dinner last night...
and cracked open a cool brew too...

got this 3 rib pork roast EVOO'd then salt & pepper seasoned (a hint of cumin)

got the Weber fire good n' hot to sear all sides of this guy...

a coupla small pieces of apple wood in flames there...

then, indirect and probed for a 128ºF internal temp

when my desired temp was achieved, the roast was loosely foiled and allowed to rest for 15 minutes.
the bones were then removed and the meat was sliced...

served with baked russets and garden crook neck squash and sweet peppers...

it was as good as it was back on GrillFest3!
Found a nice after dinner drink from Morgan's neck of the woods...

Beautiful cook Jim, that roast looks perfect. When Barb and I went to Alaska we took a tour of the Alaskan Brewing co. got to taste a few different brews. Really great beers and a laid back staff, fun place.
 
Looks like a prime rib roast Jim!
I'd like to pick a (pork) bone with you someday!

Pork looks delicious Jim! I'll have to seek out that pumpkin ale, looks like the perfect beverage for the autumn-like chilly weather we're getting here.

I'm more than happy to see an encore presentation of the three-bone chop, Jim! I especially like the first photo with the beer, the dog, the chimney starter, and the sunset off in the distance…it pretty much captures the perfect Labor Day weekend atmosphere. Terrific action shots too…love all that pyrotechnic cooking in the searing pics.
