Steak and Rellenos

I've got to learn to stay out of Costco when I'm hungry. We tapped the meat counter for 4 prime rib eyes again. Couldn't resist. We love a side recipe out of The Big Book, Poblano Rellenos, so made some of them to side up the steaks.

Got started on the peppers and tomatoes for the sauce first.

Skins nice and blistered.

Stuffed the peppers per the recipe with white rice, goat cheese and raisins. Also processed the tomatoes and a chipotle chile in adobo in the food processor and simmered on the stove for a few minutes.

Then the steaks, coarse ground black pepper and salt only.

These steaks were the absolute best I've ever cooked. They were juicy and that salt and pepper crust just made them pop. You can't go wrong with Costco Prime meat. IMO. The peppers never disappoint either, if you remember to apply that wonderful sauce at the end. Thanks for looking everyone!
