    I've had an interesting night. I took a little nap around 1am with things holding at 245 lid and 212 grate. At 4:30am my maverick alert went off and the temps were 220 and 193.     I bought some bulk spices from Penskys and was wondering about the best way to store it. I put some in containers I had and the rest I left in the original baggy and then put them in foodsavers. Should these be kept in the freezer or the cabinet?

    I used the bread machine, and the dough was more firm. Thanks for the feedback. I'll try again, maybe mix by hand. That was my first try at baking anything from scratch so a little trial and error should be expected, I suppose.
