WSM 14" lid on Smokey Joe Mini pot...

This is how another member (Mac) did it. IIRC, he used a water pan from a 18.5" WSM (same shape as the bottom of the Smokey Joe) as the lid, and fabbed up some tabs to hold the lid to the tamale pot body. Here's a pic of the tabs.

    Which performer should i get?

I picked up a used SS performer for $50 off my local craigslist. I wanted that particular model, since I wanted the metal table and square tube frame (the table for being able to put hot items on the table without damage, and the square tube frame for a couple of mods I plan to do).

My first attempt at beef short ribs

I saw a pack of 4 individual beef short ribs at the supermarket (marked down, since they were a day away from going out of date), and couldn't resist buying them. I looked on here for suggestions on time and temperature, and I used a rub I'd previously used on brisket, smoking them on my...

    My son's new Smokey Joe

How about making it a mini performer?

    My Craigslist SS Performer find

So, after giving up on finding a decent SS Performer in my area, I happened to stumble upon this one last week while I was looking for something else. It's green, and came with the wire charcoal baskets and Weber Style vegetable basket. The grates weren't usable (the charcoal grate was...

It looks pretty good from here.

    Saturday brisket for a friend's 40th

My friend's 17 year old son was a big reason for that, he's a brisket fiend.

    Saturday brisket for a friend's 40th

One person that showed up to the party is my friend's boss, who was invited only because he had been talking about brisket that he had at a restaurant, and my friend wanted his opinion on how mine stacked up to the restaurant's offering. I got a thumb's up. :)

    Saturday brisket for a friend's 40th

I only cooked the flat for this party. I still have not cooked an entire packer brisket. Hopefully that will change soon.

    Saturday brisket for a friend's 40th

So, I was asked to cook something for my friend's 40th birthday party, and I went with brisket. I picked the biggest one at the Walmart Supercenter I could find, and went to work (after trimming, it was probably about 9 pounds). Injected with beef broth, coated with yellow mustard, and then...

    My first roti chicken

That looks great. I still haven't used my rotisserie ring yet, hopefully this year that'll change.

    Dusting off the 22.5" OTG

So, I fired up my Weber 22.5" OTG grill today, and cooked up a London Broil and a thick cut NY strip steak. The London Broil steak was marinated in Stubbs marinade, while the NY strip steak was painted with a thin layer of mustard, then dusted with Weber's steak and chop seasoning and paprika...

    Performer dimension requested

Awesome. Thanks for the info, now I know what length to cut the steel to. I'm still going to have to figure out the propane tank and side burner mounting on the widened frame, but as soon as I can get the rust sanded down and over to my uncle's house for welding (I don't have a welder, and he...

    Performer dimension requested

I'm looking to modify a Genesis silver frame to fit my 22.5 OTG and 22.5 WSM (it's too narrow right now), and I'm unsure how close the frame rails get to the bowl of a production Performer. Can anyone tell me the inner dimension between the front and back frame rails?

    Pretzel Dogs and Sausages

I've done similar with Pillsbury crescent rolls, but I didn't stuff them with cheese, use the soda bath, and I used my kitchen oven. The next time I do them, I'm going to do them the way you outlined, they look delicious.

Some chicken breasts, and twin tri-tips

Thanks for the compliments, tri-tip has quickly become one of my favorite cuts to cook (and eat :) ), so I'm definitely looking forward to the next one.

Some chicken breasts, and twin tri-tips

I actually found the tri-tips at the local Walmart Supercenter. There's a nearby store that I might have been able to get them from as well (they do custom cuts), but with work this week it would have been hit or miss whether I could have gotten there before the meat cutters went home.

Some chicken breasts, and twin tri-tips

So, I've got a couple of cooks to post here. The chicken breasts were cooked last week for my mom, sister, and I. The 45 minute travel time to my mom's house didn't do the chicken any favors, but it was still good. The tri-tips were cooked for my father's birthday, and they handled the trip...

    Brisket, for family

It was a mistake that started at the store, too. I bought the can of stock specifically for this brisket, since I had forgotten to buy more beef stock after I used the last can. Hey, maybe that was what made my 7 year old niece like it so much. It could be my new secret ingredient.
