    Weber Griddle First Cook

    Makin' Bacon

    Did two pork bellys on the WSM using the hanging rack. Cured, smoked, sliced, packaged and put in the freezer.

    Pit Beef Sandwiches

    Smoked a couple of chuck roasts yesterday for some pit beef sandwiches. Smoked them for about 3 hours at 250 and then put them in a pan with a little beef broth, sliced onion, bell peppers and garlic. Covered the pan and cooked until it was falling apart and shreddable.

    SPOG and Parmesan Crusted Wings

    Decided to do a dry rub wing this time. Mixed up some SPOG and Parmesan and dredged the wings before going on the performer with the vortex.

    Fresh Caught Sheepshead and Fish Cakes

    Smoked Chuck Roast for Chili

    Decided to use some chuck roasts for a chili I was making and figured I would smoke them. I smoked them for about 2 1/2 hours and then cubed them up and added them to my pot of chili. Turned out awesome and very tender. After adding them to the chili, I simmered for about 2 1/2 hours longer.

    Three Racks of St. Louis Spares on 22 WSM

    Did three racks of ribs on the top rack of the 22 WSM and was able to lay them flat. Love the big version of the WSM. Put a pan of baked beans under the ribs.
