If you need to rush it, you could always turn up the heat on your smoker by letting in some more air, or transfer the meat to an oven and finish it off . Just for future reference. Hope it was good!

Brisket is fickle IMO. I cooked one brisket to 203, and it was nothing but mush. The next brisket I cooked to 203, and it was like shoe leather. Each one is different.

Was looking at the grill too. Also just my wife and myself, and very rarely have someone over, so don't need a huge grill, although I have a large covered deck with more than enough space, just not sure I need anything more than a 2-burner grill.

A rough estimate is 1 1/2 hours per pound. Give or take, depending on your temps that you like to smoke at, whether your smoker maintains those temps unattended, whether you foil or not. That's what I use as rough guestimate, if you have plenty of time, use a lower temp, if you need it faster...

Is it as tender as a slow cook brisket?

Just today I used some of the Camp Chef CI conditioner on and old pan hat had some rust on it. It looks like new.

I love mine. Very hand, and makes me a better cook.
