I am smoking a brisket next weekend for my daughters birthday. I want to try using butcher paper. What width do you guys recommend?

For me the 24" is muche better. Otherwise you have to overlap 2 foils and You can do it like Aaron Franklin does, but plus a lot of efforts!

Chris, have you made a video showing how to wrap a whole packer?
No, I have not. But Aaron Franklin has. You can watch it here...brisket wrapping is at 1 minute 52 seconds.

But you'll notice he's overlapped two long pieces of 18" paper side by side. He puts the brisket on one end and brings the bottom edge of the paper over the length of the brisket, then brings the paper up over on each end of the brisket, then rolls the brisket forward to complete the wrap. Kind of like how you wrap a burrito.

You may be able to do use a single long sheet of 24" paper and wrap as Aaron shows, or you may try using a 24" x 24" square of paper, placing the brisket in the center on the diagonal, then wrapping as Aaron shows. Just do what works, I don't think there's any magic here. :)
