    first brisket today

I'm a pork guy and I'm trying my first flat today. It's about 5.5 lbs. From what I've read with brisket it's done when it's done, but I don't know what to do about foiling. Should I or shouldn't I, and if so when is the proper time to foil? I'm putting a foil lasagna pan on top of the clay...

need some tips for doing ribs and brisket

I have not had great success in the past when trying to smoke different meats at the same time, and I would like to try a brisket and three racks of baby backs on Saturday. I have done ribs plenty of times, but never a brisket on my WSM. I'm a clay flowerpot user. I also use Kingsford blue...

    Sauce for Pulled Pork

Big 2nd on the Williamson Bros.! When I buy a bottle I remove about 1.5 tablespoon and replace with Tabasco and give it a good shake. Gives it a little kick that everyone seems to love and thins it out juuuust a bit more, making it perfect for PP.

finally joined the roadside chicken bandwagon yesterday

I used the WSM instead of the gasser and put the chicken halves on the top rack to mitigate flare-ups. Also left out the water pan entirely, and I used two chunks of apple. I think I had a religious experience with my first bite. pic taken just before I moved the grate down just over the...

need some good smoked wing recipes

I'm assuming I'd need to remove the water pan and do direct heat to get to 375F, correct?

need some good smoked wing recipes

I picked up some whole chicken wings on sale and stashed them in the freezer until next weekend. I've never smoked wings before and I'm looking for recipe recommendations. Ideas? thank you!

Bacon Wrap Lollipops 1st for me

I was thinking about trying lollipops this weekend. How does the skin turn out, being on the inside away from direct heat?

I'm about ready to give up on skin-on BBQ chicken

I do not marinate or brine. Usually dry with some s&p sprinkled on, sometimes brushed with olive oil. I will have to give those recipes a try.

I'm about ready to give up on skin-on BBQ chicken

...tried so many times to get crispy skin but the saucing just makes it impossible. I always pat the pieces dry; few times I've brushed with olive oil to try and get some crust. I have a Charbroil RED and it sears meat pretty well. I've tried searing direct and moving to indirect and saucing...

    long smokes on barrel smokers

I got a nasty reminder of how good I have it with the WSM regarding long cooks on a recent trip home to visit my dad. Not only did he want to smoke a butt, a brisket, and 3 racks, but we used his dual-zone (but single lid) charcoal grill. Cooking duties have pretty much been handed over to me...

An excuse to drink a dark and stormy on a sunday night

Jeff, that looks incredible. I love Caribbean food but I've never professed to be capable of reproducing it well at home. I typically rely on Walkerswood's Jerk Seasoning as a rub for chicken and pork, and as good as it is it's still not in the neighborhood of the real thing. Have you ever...

crispy chicken skin on an infrared grill

I know it's heresy to some here but for my regular weekday grilling duties I own a new Charbroil 100% infrared gas grill (the one with the "U"). I can't remember the last time I grilled skin-on, bone-in chicken and I've got a package of said poultry in the fridge for dinner tonight. I would...

    Kingsford Charwood?

Lonnie- Kingsford changed quite a few products this year (mainly regarding the size of the bag...they went smaller) so you may be seeing a temporary lack of availability as stores run out of the old and the new SKUs are rolled out. We've seen this at a number of our stores (Home Depot) this...
