    Pork shoulders are very forgiving, and no matter how many times I've attempted to mess one up, I've never succeeded. Great choice for a first cook. Relax and enjoy!

    It wasn't scorching outside, so I fired up the Jumbo Joe for some wings this afternoon. Seasoned with Weber's Kickin' Chicken, and smoked using cherry wood. Cooked indirect between two fully lit charcoal baskets, bottom vent 100% open the entire cook, rotated pieces and lid every 10 minutes...

    Walkerswood is my absolute favorite jerk seasoning, and if you haven't tried it smoked, you're in for a treat. On she goes with some apple wood. 15 minutes indirect heat, ~375F dome temp. Rotate bird 180 degrees, 15 minutes, ~375F. Rotate bird 180 degrees, 20 minutes, ~360F. Rotate bird...
