I have to say the BBQ I make is much better than anything I can get around here. Smokey bones is about as good as we get locally. Everybody else pour BBQ Sauce over everything what are they trying hide. I will take my BBQ over that any day.

Come on my chef is cooking a chicken. I love the Swedish Chef mort mort mort.
The recipe I follow is a Beef Rolls in Tomato Sauce. Started using it before I before I received my WSM
need 1 to 1 1/14 pounds thin sliced beef from the rib, loin, or sirloin
salt and pepper
1/3 cup flour
2 ounces of Prosciutto
1/2 pound Fresh Provolone or Mozzarella cheese cut into 8 pieces...
Tom those look unbelievable. I think we need to post that in the appetizer recipe section. I make the traditional Italian bracciole around holiday time.
I also have the DigiQII with the 10cfm fan. I absolutely love it. It keeps my temps right where I want them for as long as I want them. When you read their site they say the device will learn your cooker. I believe my DigiQ learned my cooker very quickly.
I am also a techie but wanted to...
I used some of John Henry's Apple rub on some Chicken wings I cooked over wicked good lump on the OTS and then glazed with an apple maple BBQ Sauce really yummy app.
My only complaint about these rubs is the ones I bought came clumpy. I bought the burbon, apple, maple, maple walnut. Not sure...
So has anybody measured the damper holes on the original WSM? Be good to know for us Guru guys if the adapter for the fan will fit the new WSM on Steroids. And yes so thinking of canceling my order for the stacker.
Chris thanks for the hard work on this site. I have to agree with everybody...
My wife just recently bought me a food saver. What I have been doing is putting the sealed bags in boiling water. Heats up well and doesn't dry it out.
