    Reynolds 914 wrap

Ive seen plastic wrap used in the holding/resting process for ribs, butts etc. I even think I saw Emeril L. or Alton B.,use it one time cooking ribs low and slow in the oven.

    Favorite bread for pulled pork

Jim Simple as it sounds, my favorite is the "cheapest" hamburger buns I can buy. It's not the money savings, I like the taste of the buns, maybe there sweeter or somthing. IMO

Foiling An 18.5" Water Pan - A Solution

I just experienced this problem, this morning. Everthing was fine until I decided to "Top" off the water pan. Water started dripping, thought I had a leak in the pan. I had my water pan foiled both on the outside as well as inside. Never had the problem before. Must have had a small pin hole...

    Added cooking grate ????

Tim My added grate is actually 3.75 inches lower than the top which essentualy splits the distance in half between the top and bottom cooking grate on my 18.5 WSM. Your right about the butt ht. problem. I'm mainly going to use the added grate for chicken parts.

    Added cooking grate ????

I hung a cooking grate onto (below), the top grate, it's about 4 in below the top cooking grate. Is it okay to cook on this grate, with an "empty" double foiled water pan. Say for a small butt, or chicken pieces etc. I have cooked on the bottom grate several times but always with water in the...

    Top cooking grate 18.5 WSM

Went to HD this AM to get some K on sale. No top grates there or at lowes, there out of them. The stores here are smaller stores and it's the end of the BBQ (Sales) season, no restocking. Went to the Weber site with the "free" shipping thought I'd give it a try.

    Top cooking grate 18.5 WSM

Went to order an extra top cooking grate for my WSM. Couln't find part# 70601 as referenced in the parts section on this site. My WSM is not the current (new) design. I couldn't find an "Unhinged" cooking grate on the Weber site. Called weber and was given part # 80634 and I ordered it...

    The $1 Smokey Joe Special

Matt Good deal !!! I feel like I got ripped off LOL. I paid $2, for an older model with the 2 horizontal side intake vent holes that are kinda useless. Had to mod mine installed a WSM intake vent cover, works a liilte better now. Good luck with it.

    "Grill Extender" on WSM ???

I have made a cooking grate extender with bolts washers etc. and it's been working pretty good. Question is what are the benifits if any to using the "Big Green Egg" (single tier), Grill extender on my WSM ? Local dealer just started selling green eggs as well as accessary's. Is it woth the...

    Alton Brown's "Right on Que"

Jerry P I'm curious as to when you would use the "flower pot" smoker as opposed to the "WSM'. Just trying to get some insit on this. P.S. I'm a Fan of Alton Brown's. Although my take on the program was he was very high on Low & Slow. I think some on here might disagree (High Heat).

    Auto Temp controllers ???

The problem is, I'm kinda gadget Guru to some degree. When I saw it on the Alton Brown program last night it looked pretty neat. The thought of not having to worry about the temps is great. Although I don't do a lot of long cooks, since getting the Vac sealer and cooking in larger quanitys...

    Pulled/shredded chicken ???

I'm thinking it might have been braised. It seams to me in "my" experience with cooking chicken, that as tender as it gets smoking it, it still might get alittle more tender if braised properly ? Although cooking it low and slow it kinda falls apart as well. It seamed to be a combination of...

    Pulled/shredded chicken ???

Had a pulled or shredded chicken sanwich last night at a fundraiser for the local fire dept. The chicken meat all dark, was pulled very very fine. I know if you stir Pulled pork enough it gets very fine strands. didn't think you could do the same with chicken. i usually just pull leftover...
