Quick Smoke

Hi All,

I want to do a short smoke on Sunday. I don't want to do ribs or chicken. Any suggestions on small (6-8hr) smoke on the WSM? I'm thinking meatloaf or a small roast.

A regular roast (like pr rib) will cook in the same time as in the oven--at 325o about 20 min/lb. The leaner the meat, the higher the temp and shorter the time.

Temps are the determining factor, not the container.
 
Thanks all. I've been thinking about a pork loin or a few tenderloins but I think I'm going with personal size meatloafs (Nerf footballs). Maybe 275F with a single chunk of cherry? I'm going to try a homemade tomato sauce/ketchup on top. The recipe calls for smoking the tomatoes but I think the cooking process will be enough.

Totally off topic but I did 2 chickens on a rotisserie using the Roadside marinade and mop and they turned out great. Got all the carmelization without the burnt corners.
