    Food Cross Contamination

    The butcher shop that we use in Oakland here has a burger patty that it makes with bacon and short rib (they mix and grind both together), most people who try it are fairly enthusiastic about it. you might want to try freezing the bacon and then grinding it into the beef, makes for a great taste.

    The cool thing about this grill is that it comes with the gourmet grate system. I actually bought this one in early July and I have been cooking a lot on it, great grill.

    Roslee Grill

    The Roslee stuff is really high end. A lot of the other kitchen tools they make are very expensive. I am not surprised to see what they get for this. It reminds me of the Viking version of the big green egg, it is very expensive yet not more functional.

    Bratwurst smoke ring?

    I do not get smoke rings on a brat, no matter how long I leave them on the smoker. As for poking holes in the brat while cooking or before, that is just wrong. Almost as wrong as butterflying a sausage before cooking it.

    Question on Beer Can chicken smoke

    I have always done beer can chicken indirect with a bit hotter temp. I cannot see how the smoker could get the beer to boil and steam from the inside. I would also think that the skin would not get as crisp as it would with higher heat.

    they work great. I have always gotten my butts from costco and have had good results. In fact I am prepping a set right now for super bowl weekend.

    maverick thermometer help

    If you are really that worried about it (I wouldn't be) call their customer service on monday and talk with them. They have truely remarkable customer service and support. regards Brentley

    Maverick bad fix or replace?

    Wow Have to update this one. I sent in my malfunctioning sender early last week (Monday Nov 14) and today (Monday Nov 21) I got a brand new sender. It came with fresh batteries and still had the film over the display. Great service from Maverick, now to fire up the WSM and use it. Brentley
