What will you smoke for Smoke Day 12 this month?
This year it will probably be spare ribs in the WSM with my favorite Apple wood.
How about you?
 
Jim Lampe's HH baby backs and our first ever brisket flat. If that goes well I'll try a full packer later on.
 
Thinking out of the box, I wanted to try something else no one was going to do. I came up with Pastrami Beef Plate or short ribs.
Gonna be guud.
 
No worries guys. We always have our Smoke day cookout on the Sunday of the race. That way you can still go to a Memorial Day cookout. It also gives you a reason to NOT go to the race! :p
 
Spares & Kettle Fried Chicken.
I'm gonna try to replicate a fried tater salad we had from a BBQ joint in Dekalb Il.
