Willy's Smoked Chili with Marrow

Had a request by the tribe for one of my Chili dishes, so here it goes.

All suspects lined up

Roasted the garlic, Jalapeno, Poblano, Red Bell and Tomatillo for the base. Added a large can of diced tomatoes

80/20 browned and drained of fat then the sirloin stir fry cuts were diced up and added, red onion added, 2 tbsp Cumin, Kosher and fresh ground. Diced green Bell added also. Two Bone Marrow Bones added to the Chili along with the Pinto Beans
Then the base.

On the WSM at 275 for a few hours with Oak chunks added

Marrow spooned out and blended with the chili when done. The aroma is driving me nuts

My home made Mojo De Ajo spooned on the bread and some butter added

Outlandishly good looking chili. And nice choice of beverage.

Question: would there be anything to gain by roasting those bones first, or would that defeat the purpose?

Don't think so Jim, the aroma, texture and flavor added by adding the marrow bones during the cook puts that flavor all through the chili and scooping the cooked marrow out at the end and folding it in adds beautiful texture and flavor
 
Bill, Darn good looking cook. Can you spill the beans on your Mojo recipe. I've never tried making it but love it. Thanks and Happy New Year.

Bill, I'm a true chili head and yes I'm one of the unwashed that likes beans in his chili. I've never tried the bone marrow but I can see where it would really add some flavor and texture. As always you're ahead of the curve, nicly done!
 
I wouldn't believe it if I hadn't seen it. The marrow bones - that's new to me... I picked up 3 for the pup a couple days before Christmas - she can only get the first couple inches....I poked it with my finger - ewwwwww :) wouldn't have thought to eat it.
