Well...I guess any boar is wild? Anyways..

Todays dinner:

Wild boar(shot by my FIL/and cut up by a trusted butcher and tested...Otehrwise dont follow my temps) marinated in chimichurri...Served with the Original cooked Hasselbacks/chanterelle´s and a red wine sauce.(not like these can stand up to a bacon infused ones..But hey!)

Some good eats 4 sure...Emilie and the boys loved it.
Me? not so mutch...I have a hard time with anything wild.
Not my cup´ó´tea...Beef or Pork next time.

Wild boar IS a hog. It just feeds differently and has a bad disposition;). Traditionally, hunters harvest mature boars. Domestic hogs are harvested early and sows are preferred for milder tasting pork. However, a young (wild) boar can be quite tasty if it is handled correctly post mortem.

The whole cook looks scrumptious to me!!

Picture perfect cooking again Daniel! I'm with you on the "wild game" taste. Same goes with sheep
and antelope. But will eat venison and elk. Really am liking that Primo of yours!
 
I've had mixed experiences with boar, maybe it was the butchering/care, maybe it was the age of the animal, I'm not sure.
But I will continue to try it as the opportunity arises.

That being said, yours looks great.
 
Good looking cook! Never tried boar but I'd give it a shot if the opportunity ever comes up. Pictures are great too!!
 
Very nice looking meal Wolgast. Wild boar is somewhat to lean to smoke with exception of the ribs. Wild boar Imho is best and tastiest when guisado.
 
That's an amazing cook Daniel. I like the wild stuff because I don't get it very often. Beautifully done and beautifully plated. My best to the family.
