Howdy folks..hope you all had a great weekend..not much football on (pro bowl turned into a huge joke)..anyway this story starts about 6 months ago..I aquired a free freezer...gal that have it away had some deer meat in it..unplugged it and took it home..had several packages of vacuume packed backstrap and burger..looked fine but I'm pretty OCD about my game and fish so I figured jerky it would be..good weekend for it so I cut up 6 small packages which ended up to about 4 lbs of trimmed out, fat free jerky meat! Actually it looked and smelled better than most meat at the store fresh! Mixed up a brine and soaked it for 24 hours!

Also did about 2 lbs of burger that was packed also into links..I didn't find casings small enough to make hunter sticks out of so I just mixed it up web some goodies and let it form up in the fridge over night!

My set up was no water pan...snake method with hickory and I foiled the bottom rack..here's the snake!! It works .

Jerky and sticks all set up on the WSM...chugging along about 140 ...

About 28 and foggy this am..WSM doing it's job!

A peek inside the door..I got most all the 4 lbs hanging on tooth picks from the main rack..when your processing a lot of jerky this is time consuming but works super!

Ok this is a lot of work..breakfast time!!

About 1/2 way..about 3 1/2 hours in!

At about 7 hours...pulled it all! Looks tastes and smells like jerky!! So glad I didn't turn this meat into dog food..good stuff! First time I tried this jerky recipe and loved it...poured a bit of knob
Creek maple smoked bourbon ...ah not my favorite..little sweet for me'

All in all...another successful cook! Take care folks!!
