Tomorrow is our annual Thankgiving in Aug at work. So I again volunteered to smoke the turkeys. I even had one young lady come to me and ask if I was smoking the turkeys again. I said yes and she said she just wanted to make sure. LOL. It feels great to cook for family and friends and they enjoy it.

I started last night by brining the breasts in a Brown Sugar/Bourbon Brine. Tonight I removed the water pan and cooked over hardwood lump and apple wood. ...but I have to admit I left the bottom cooking grate in as an insurance policy in case the hooks let loose. They did not. :)



Here's how I get and keep the temps up: insert a skewer to create a larger chimney.

Crispy looking skin! How long was the cook ? Your temperature gauge looks about 325* I've been itching to smoke a turkey but had recent surgery so I'm off my feet for another bit. Nice job!

The skin is very crisp. It took right at 3 hours.
 
Can I be a member of the crew Dwain, I love smoked turkey. We do a couple during the year and its getting to be that time again for sure.

Great job on the smoked turkey. There are few things better. Looks delicious. It's always a good feeling for me cooking for others. I'm sure all enjoyed!

That would be cool! I use the 14.5" in the RV and would definitely like to have some PBC-style foods while out. Jim Lampe made one for his 22". You might take a look and scale it to fit your 14.5".

Man those look good, that reminds me I have one in the freezer! Will have to thaw it out and get some practice for TG and Christmas.
