Tri-Tip Friday. Oak and a new rub!

Got the hankering for some beef and found a great sale on Tri-tip. These babies were trimmed beautifully! IMG_0835.jpegFound some new rub at Costco yesterday. I need more rub like I need another lawn to mow but hey, they were like $6 each so…IMG_0836.jpegGetting into the weekend is a good feeling!IMG_0838.jpegIMG_0837.jpegWent with the new grill and Venom at about 260 for a bit with some post oak and wine soaked stave. Pulled about 110 and seared the bad boy flipping several times. IMG_0842.jpegTook it off at about 135 and gave it a ten minute loose foiled rest. I’ve seen those rubs, how were they?
Food and pics are amazing as usual.
The rubs are OK, not as salty as I would like but good. I would add some salt. I also think they would be great for traditional carne asada on a thinner cut of beef. For the tri-tip, I added some base rub and then used some of the carne asada rub on top of it and it added some very nice color. There is really not a huge difference between the carne and pollo...but it was such a good price I got them both!
 
I just bought the Carne Asada rub this morning and used it on some flap meat I also grabbed at Costco. Good stuff, though I also marinated the beef in some EVOO, orange juice, lime juice, soy sauce and beer for about 5 hours. I then took it out of the marinade and dosed it with the rub, letting it sit for about an hour and a half before cooking. Right as I was going out to light the grill, the skies opened up. So I grabbed my Lodge CI skillet and cooked on the stove. The results were good, but I'm sure would've been better if grilled 'for real'.
