Tri-Tip Dinner

Continued my exploration into the freezer and came up with a couple of Tri-Tips. Did some garlic mashed potatoes and stuffed zucchini to side things up. Rounded off the cook with some sourdough garlic bread on the grill as well.

Got this guy ready for some rub.



Rubbed with Uncle Chris' Gourmet Steak Seasoning. Saw this on Enrico's latest post and decided to order a bottle.



Got it going on my 22.



Most of the work for this cook went into the stuffed zucchini. Got going on the stuffing.



Got the veggies going in my small CI pan for a quick saute.



Pulled from heat and added oregano, basil, parsley, salt, pepper, Panko bread crumbs, Parmesan cheese and Romano cheese.



Stuffed two medium zucchini. I had a problem with the recipe and ended up with way too much stuffing. Didn't feel like a trip to the store so I grabbed a couple of yellow squash we had in the fridge and stuffed them too.



Got the stuffed squash on the grill for about 20 minutes.



Got my garlic bread heating as well.



Temped the TT at 45 minutes and was surprised that it was already at 145 IT. A little disappointed as I like to cook TT to around 125 - 130. Oh well.

Here's the garlic mashed new potatoes. Did them on my camp stove so no action shots.

The Tri-Tip was wonderful, even though it was more towards medium that medium rare. Uncle Chris' Gourmet Seasoning was excellent as well. That's it for this meal. Thanks for looking.

Cliff what a great meal. The meat looks great but I think the zucchini is my fave. If you get a minute can you share the potatoe recipe? Great looking food!
 
Awesome job Cliff, TT is perfect and the zucchini outstanding. Don't feel mad about having to much stuffing I do it all the time. Just ask Rich when we were dating and we'd have a stir fry he tell me you cut enough up to feed an army. It was fun anyway. I do like the combo will try it also great job as always.

Robert.... Here's the potato recipe.

Ingredients
8 medium red potatoes, quartered
3 garlic cloves, peeled
2 tablespoons butter
1/2 cup fat-free milk, warmed (I used whole milk)
1/2 teaspoon salt
1/4 cup grated Parmesan cheese (I used freshly grated, not the jar stuff)

Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are very tender.
Drain well. Add the butter, milk and salt; mash. Stir in cheese.
 
Tasty looking Tri tip!

Cash and Carry just put them on sale $3.39/# so I'll be picking up a bulk bag this week! Gotta love tri tip!
