My wife and I recently had our wedding anniversary. Made a run to Costco and picked up a couple of Prime Tri Tips to help celebrate.
Marinated them for 8 hours. The last few TT's I've done have been dry rubbed, so I thought I'd mix it up. Marinated consisted of lemon juice, olive oil, dark brown sugar, soy sauce, Worcestershire Sauce, s and p, minced garlic, Chili Powder and scallions.
Got it on some indirect heat.
Took a few cauliflower florets and dipped in some melted butter and minced garlic. Coated each one in bread crumbs, Parmesan cheese and salt and pepper. On grill for about 20 minutes.
Roasted a few Reds along with a few chunks of sweet onion.
Moved the meat over to some direct heat after IT reached around 115.
Pulled cauliflower and potatoes.
Sliced meat after about 10 minute rest.
