Throwdown #26: Tacos


 
Since this is my first Challenge.... & we eat lots of tacos around here.... I'm going to enter another dish: Tacos Machado con Huevos.
I had saved a part of a smoked brisket flat & it was time to use it. This a simple recipe: some shredded beef, grilled onion & serranos, scrambled eggs. Add some guacamole, fried beans (Tony style) & warmed corn tortillas & you have a little bit of Heaven on Earth.

Here is my entry for Throwdown #26 Tacos.

Catfish Tacos

Fresh Catfish marinating. Lime juice, garlic, cumin, chili powder and oil.



Makings for Slaw.



Slaw, drizzled with oil, lime juice, S & P.







Warming up some corn tortillas.



Catfish grilled for about 6 minutes.





Catfish on the tortillas.



Plated.

Beef tacos, fish tacos - fish tacos, beef tacos, what to do? I couldn't make up my mind, so we went with surf & turf!

For the beef, we did flank steak - marinated over night in lots of good stuff - very heavily seasoned.
