This weekend I am trying my first FATTIE

Started with 2.5 lbs. of meat 50/50 pork and beef

Topped with chopped onions and green peppers, colby jack cheese, crushed tater tots, and apple honey bbq sauce.

going to the smoker @ 265 deg. and cherry wood.

Its on the smoker now I will get some more pics when it comes off.;)
 
The fattie is done and we destroyed it.... Everyone thought it tasted great..... However next time i will not use bacon, i will also just use sausage and no beef, and add twice as much cheese. Thanks guys for turning me on to these. They get a

Scott I also LOVE bacon.. but some of the bacon never cooked, I unwrapped the fattie and fried it up in a pan.
 
gotcha, what temp were you at. My last fattie was cooked around 260 and the bacon was not crispy but edible......

Well done Mike! The tater tots are an interesting twist. FWIW, I'm with you in the no bacon camp. The weaves look great, but I can find better ways to use my bacon.
 
I agree with the no bacon sentiment...well, at least as a weave on the outside. I like to crisp it up, crumble it and add it to the inside filling. Heaven!

Looks great Mike! that is in my list also. Man every time I come on here I find something else I want to do, not a bad thing though. I heard that the bacon doesn't cook all the way on some also. I think I'll take a page from your cook book. Looks awesome though, great job:cool:
 
Would it be possible to fry em up a bit so they are still able to weave and roll and hopefully cook up better in the smoker??
or

put the fattie in the kettle first at a higher temp to crisp up the bacon and then put it in the smoker??................
