After a month and a half of little to no grilling or smoking I was really looking forward to doing some HH chicken on the WSM along with a dish that Nate did with mashed potatoes on a cedar plank.
Weather man said light breezes and no rain, Yahoo!
Well as soon as I fired up the WSM I thought I’d have to chain the sucker down so the wind wouldn’t knock it over!
Did bone in thighs rubbed with Penzey’s BBQ 3000, corn on the bone and planked mashed taters.
I put a boat load of coals in the WSM with no water pan and two chunks of peach for the smoke. The WSM did well and hung in at 325 -350 even with the wind.
When the chicken was almost done I hit it with some Stubbs BBQ sauce.
Then the taters and the corn were next and after 20 minutes the cheese on the taters hadn’t even started to melt and the corn was still raw which was weird as the maverick was still reading 330.
Okay fire up the gasser to get the heat closer to the food, that worked.
Overall impression, the Penzeys 3000 and the Stubbs didn’t dance well together, not a good flavor profile and the taters didn’t have much if any smoke taste, maybe I should have let them cook longer but the board was scorched so I thought it was done.
Oh well lessons learned.
