Woke up in the morning, had 2 big pork belly chunks cured and ready to be smoked. Pork belly is in the Hasty Bake

Also decided to do some baby backs in Mr. Leaky 18.5 Mountain Smoker.
The ribs have been on & sauced. Potatoes are ready to go in too.

The ribs came out perfect this time. They were spot on.
Slicing the bacon up.

We used brown sugar & pepper on one & Memphis Dixie dust on the other.

The bacon is all sliced and ready to be packaged up.

Lovin it Russ, great ribs and great bacon too! See your four footed kitchen guard is on duty, got two of them myself.
 
Fantastic ribs and bacon Russ, and I see your helper to close by in case something hits the floor. Our two are always close when we start cutting.
