Tatonka Rib Eyes, French Fries and Cajun Corn

Picked up a couple of beautiful Rib Eyes again at Costco. That store is costing me a lot of money. I had my maiden voyage with Tatonka Dust last week on the flank steaks and decided to try it on the prime Rib Eyes. Normally just salt and pepper fine steak, but decided to go for it. Did some French fries on the grill in some peanut oil and rounded things off with Cajun Corn, a Weber Recipe. To top off the Rib Eyes I made some of my garlic butter. It's delicious on a nice steak. Here goes.

Made my butters the day before. The Cajun Butter for the corn is on the left, Garlic Butter for steak is on right.



After thoroughly mixing, I like to roll butter into a roll and wrap in plastic wrap, and put back in fridge to re-harden. Stores well that way and doesn't take up a lot of space.



Got the corn all rinsed and removed the silk. I normally don't cook corn in the husk, but the recipe calls for it and it does help retain the butter while grilling.

Rib Eyes and Corn are all ready to go.



French Fries, Russets, are deep frying on grill.



Had to do two batches. French Fries are done. Seasoned with K Salt, garlic powder, smoked paprika and a dash of sugar. Seasoned fries before placing in oil.



Put the corn on the JJ after the fries were done. Let them cook while I did the Rib Eyes.



Got the kettle as hot as I could get it. Cast Iron nice and heated. Used Kingsford Comp. for this.



Steaks on over HH. These steaks were 1 1/2 inches thick and weighed a total of 1.7 lbs. Cooked direct 4 minutes a side.

Flipped to back side.



After about 8 total minutes, moved to indirect heat for about another 6 minutes. Cooked to an IT of around 133.

This was the best steak I've ever had. My wife thought so too. The meat practically melted in my mouth. The Tatonka Dust is a winner too. So much flavor. Love these fries on the grill. Sure easier than getting the deep fryer out and uses less oil too. It's also more fun. Corn in one of my old favorites. Thanks for looking!

Incredible cooks Cliff. But I'm not seeing a Santa Maria in any of your pictures :)

And won't anytime soon. I had to soak down the yard for a half hour before doing this. Just run the sprinkler station around my grilling area. Sure would like one though. It's been 24 hours without anyone going on DL! Oh wait, Panik rolled an ankle.

Excellent technique. Your steaks look great. Did you like the husk on method? I tried it a while back and it was pretty good.

Great looking cook Cliff we only buy Costco meat now, pricey but good.

I take by your comment still no rain up your way? Monsoon has been a bust here, only about 10% of normal but is looking promising today. Dark and a lot of thunder.
 
Cliff, your steaks, fries, and corn all look excellent, its that picture of the grates over the blazing K-comp that I like the best

Robert... I do my corn both ways. I think the husks help retain the seasoning and the butter during actual direct cook. That's why I did it this way on this cook.

Rich... I buy a lot from Costco. The only quirky thing about ours is a lot of meat they sell is boneless only, i.e. Prime Rib, Pork Shoulders. I always prefer bone in. No measurable rain here in weeks. Hot and dry. Mid to high 100's starting tomorrow.
