Evening folks and happy Sunday!! Hope everyone enjoyed it!! My wife and I were reminiscing the other day about the great taqueria style tacos we use to chow on in SoCal...so I went to work doing a little research...well actually for starters I though I'd share a couple pics of last nites fire works!! Our local ski resort has a fire work display and torch parade every year so a bunch of us went up with the kiddos...then back to my pad till 2 am drinking beer and BSing...I'm getting way too old for that action!!
Whoops...had a bit of a mis-fire..ended up in the trees..now worries the local fire brigade was on scene!
Ok so cooking...about 2 pounds of very thinly sliced top round..soaked in McCormick mojo lime, EVOO,beer and white vinegar for about 6 hours!( all the Internet surfing for recipes and I was so overwhelmed I went easy!!)
Pintos been cooking all afternoon!
My set up for tonight!
I did the meat in two batches which took all of about 3 minutes for both batches!
All served up with rice and beans...little salsa I whipped up..sweet onion and cilantro and a few lime wedges..and of course a brew!!
Thanks for looking...man this was one of those meals I have a hard time pushing my self away from the plate! My wife said they were perfect..she grew up in SoCal so she has had a few of these !
And I leave you folks with a parting shot of the coals winding down and so am I!!
