My favorite taco is Tacos Al Pastor. I've never been able to make them good, until now. This is a winner

The cook idea came from Hey Grill Hey, Susie is a master BBQ'er (imho)

I loved it when I did it on the rotisserie, and I was able to shave four different layers/servings out of it. Every layer was charred with crispy bits.

Last cook of the summer; first ever al Pastor.

First I want to start with a shout out to Tim O and his awesome al Pastor cook from this weekend also. I have been wanting to do this cook for a while now and then when I go to do it and someone else is doing the same cook. I love this site. That is when you know you have found your people...

I haven't watched the video for the hey grill hey recipe that Chuck used to make his amazing Al Pastor here, but the one I used I highly recommend. The only think I will say is it was a LOT of work!

Picked up a 5lb Berkshire heritage butt, had the butcher slice it for me. I swung by a spot down the street called Mexicana Produce, grabbed some other little goodies for the marinade.
I’ll be giving this a go Saturday.
This should be a fun one, thanks for the inspiration Chuck, I’ll be going rotisserie style like Michael hope it all stays on.
