Tacos al Pastor

Used two pounds of pork shoulder sliced into 1/4 inch thick pieces and marinated them in a mixture of garlic, oregano, cumin, pepper, cloves, guajillo chilies, pineapple juice, white vinegar and achiote paste. I let the pork soak over night.

Those are some great looking tacos. I've never thought to put pineapple in tacos but will have to give that a try.
 
Wow James, that looks fantastic. I love Taco al Pastor. Now that I've seen it can be done on the BBQ, it's now a gotta do.

When you have some time, can you break down the quantities of this?
