Did these hot & fast, inspired by Mr Lampe & others, i used Chris's recipe and another from Franklin BBQ (used his rub...modified).
The ribs went on at 8:55am & were sliced at 11:30am.
SPOG, cayanne, and a little Arizona dreaming:
Foiled after about 100 minutes, for about 50 minutes.
Those weren't shiners before the bend test:

Overall cook time was 2.5 hours at 350F, +/- 25F.
