Had 10 people over on Sunday for a fun filled day of grilling. I have never made deviled eggs before and I was determined to make them, along with a few other first side items.
Started with 4 slabs of baby back ribs. Rubbed them heavily with McClards dry rub. Having grew up a few hours from the restaurant I became addicted to their rub. I then wrapped them in foil overnight.

Now to the deviled eggs. Since I was trying to impress the object of my affection I opted to pipe in the filling. I think next time I will use a little more mayo although all were eaten within a few minutes.

Next up is the Jalapeño poppers filled with cream cheese and wrapped in bacon. I baked these because I have limited space on the Performer and I knew 4 racks of ribs would take it all.

I put the ribs on the grill for a total of 2 hours, 1 hour wrapped in foil over indirect heat and them I removed the foil the 2nd hour. I turned them every 30 minutes. The last 30 minutes I used the Weber Kick n' Spicy sauce and sauced the heck out of them. I've been doing that for awhile now and it seems to work very well. The ribs are tender, moist and flavorful.

Here is 3 cans of Bush's Grillin' Beans Souther Pit BBQ flavor. I added 1/4 cup of molasses, a beer and some Cavendars Greek Seasoning to add a little more flavor to them.

I used the hash brown casserole recipe I found on this site for the potato side item. It gets rave reviews on the site but admittedly I think I overcooked them because they were just bland and dry. I will make it again though and maybe add bacon or chills to it.

This is a recipe my cousin gave me and said she loved it. Start with 4 cans of whole kernel corn, 8 oz of both velveeta and cream cheese and a small can of diced green chills. It was very very good and very creamy. I'm not a fan of canned vegetables however this was tasty and all my friends loved it.

Now last but not least desert. Banana Pudding which would make any cardiologist cringe.

Here's a picture of the plated Jalapeño poppers. If it looks like a few are missing, well, it's because 3 did manage to find their way off the counter and into my Border Collie's mouth. Yeah....when he was alone in the kitchen he decided to taste what daddy was cooking. He managed to pull the foil off the cabinet just enough so that 3 fell on the floor for him.

This is Riley a few hours after eating those peppers. I bet he won't do that again.
