Stuffed Pork Roast

Defrosted a nice roast we had in the freezer to feed all the Chidrens we got running around here and then two of them informed us they were going out with friends tonight for dinner. Oh well, more for me!

All the suspects lined up, the roast was in two parts and tied and hinged, was not expecting that, therefore the odd butterfly shape.

Apricots simmering in White Port Wine until tender.

Kale fresh frozen from our garden, apricots, fresh Sage, Shrooms, Shallots, Garlic all diced and ready to go

On the OTG with three nice Yams, at 100 IT basted the outside with warmed up Apricot Marmalade

having a treat tonight, made wine with my BIL, used Brunello Grapes and trying it for the first time tonight after sitting for four months. Will get even better with age but it was superb. Best bottle of red I have had for a long time

Wow! That's one heck of a pork loin! I'm doing one as i write this. Not nearly as good looking as yours.
 
Absolutely stunning Bill! Really.

Love the homemade wine. I've been making for about 3 years now. Such a fun hobby to go along with the cooking/grilling obsession.

You make your own wine too (beats head against wall) !! Amazing cook and pictures wish I had 10% of your talent.

Jose I used to make wine with my FIL and BIL, when he passed we did not make it for a long time. Last year my BIL found a place where we can go and buy our grapes and make wine using their equipment. Worked out great and we will be doing it again.
