I managed to get FD off this year but my wife had to work so that left dinner for just my daughter and I. This worked out well though because my wife is not really a meat eater and my daughter and I can’t get enough!

A local shop gets their meat from Snake River Farms so I picked up two NY strips from them - 3/4 of an inch thick. First time I’ve ever had steaks from there and after the cook, I promise it will not be the last…

I salted them and put them in the fridge for just over 30 hours:

I decided to break with tradition and chose to use lump for these. First time with B&B and it was pretty awesome:

I also decided to make some Hasselbeck potatoes with Colby cheese and a compound butter of garlic and parsley:

What an absolute treat these steaks were! I hope everyone had a great Father’s Day - and from the looks of the photos in the threads that have been posted, it looks like everyone did!
 
So, are these the Prince of steaks? 🤣🤣

Fantastic meal, Wil!! Steaks are cooked just perfectly, and those 'taters, well, you NAILED those! Your daughter must have been in heaven with that plate! :)

After having eaten these SRF NY strips and tasting how rich they were, I honestly don’t believe that I would be able to finish a whole ribeye from them. The marbling was unlike anything I’ve ever personally had. The “prime” steaks that are available to me where I live are absolutely nothing compared to these.

My 12 year old daughter actually ate the whole strip. I was shocked really. These were the “black” strips. I cannot even imagine what the “gold” would taste like. :oops:

Edit: I wanted to add that after I put the salt on these and put them in the refrigerator for the 30 hours, I did NOT add any other seasonings to the steak. Unbelievable taste.
 
I also wanted to put this here...a Costco Prime tomahawk vs SRF NY strip black. So, a ribeye vs a NY strip...

The ribeye, given its nature, should have more marbling throughout the steak right? YOU be the judge. I personally think I’ve been fooled - scratch that - suckered one too many times by “prime” beef...
 
Will, this is freaking awesome. The marbling in those strips is insane. Fantastic cook.

It makes it even better when we see our kids eat more than we do 😀 I have a 10 yr old son that devoured a steak last week in about 6 minutes, and he is the world's pickiest eater.

SRF rocks. So does your cook!
 
Great looking strip steaks! My local grocery store stocks SRF stuff too, and once in a while has a nice sale on them. The SRF quality is top notch.
