Sonoran Hot Dogs with Bacon, Pico de Gallo & Avocado

Needed to do a quick cook last night. Decided on this. Sonoran Hot Dogs with Bacon, Pico de Gallo & Avocado. Sided it up with a small macaroni salad.

Earlier in the day, I made the salad and the Pico de Gallo.






Used Nathan Hot Dogs and rolled each dog in bacon.



Here are the toppings for the dogs. Pickled jalapeno slices, thinly sliced avocado, canned pinto beans and yep, crushed potato chips.




Toppings prepped. A little Cilantro for garnish.



Bacon dogs on. Turned several times until bacon crisped up.





Dogs in the rolls, split from the top.



Plated along with the macaroni salad and a few ABT's from the other night.



These were outstanding. Recipe calls to drizzle mayonnaise over the dogs prior to serving. Loved the flavors. The rolls were a little dry and the hinge broke on one of them making picking up it up challenging. Will go with a different roll on future cooks. Will be doing these again. Thanks for looking.

They look pretty awesome Cliff! Sonoran dogs are a treat. If you can get fresh bolillo rolls, try those. Don't split them all the way open but cut a slit into each and stuff the hot dogs and toppings down inside it. More of a stuffed pocket than anything.
 
Thanks Ethan. I looked for Bolillo Rolls but couldn't find any. A lot of places were pretty low too due to the holiday. Maybe next time. Thanks for the tip.
 
Really like those dogs, great combination. Don't have HDs to often anymore but will be giving those a try.
 
Cliff those dogs look fantastic. Yummy for sure and stuffed with all kinds of goodies. Your mac salad is spot on, great job all the way around.
