Some crazy chicken.

Grilled up some El Pollo Loco style chicken last night. Used a clone recipe I found online. Bird marinaded overnight.

To go with the chicken I cooked up some rice and beans using Tony R's recipe. Went with lard instead of veg oil this time round.

I removed the chicken once it reached 170.

That looks fantastic!!! You can't go wrong using Tony's receipes. Why 170?

Read that 165 is considered cooked I like my chicken a little more done so 170 it was.

Great plate Jason.
Good call on using lard instead of veg oil.
Whenever I can, I always use beef dripping to fry my french fries. Soooooooo much better.

Looks delicious, Jason! This is very ironic. I'm going to do some enchiladas soon and was looking at Tony's rice and beans recipes too. I've done the beans, but haven't done the rice yet.

Kind of hard to put a finger on exactly what was different. I tasted the lime and garlic more than anything.
