Soba for Sunday

So today I had special company coming. Our neighbors who we are best friends with. This morning I did my second bake of Robertson's Tartine Bread. it is superb.

Our neighbors were coming over for dinner. I defrosted some of my two day process Ramen Broth which is so good I am just in love.
Today though I was using it for Japanese Soba (Buckwheat Noodles) which are delicious.

All the knife work out of the way, broth heating up all day reducing further

Yellowfin marinating in Sesame Oil and Black Pepper and Shrimp marinating all day in Five Spice powder in the fridge

made up a seasoning sauce with Ponzu (uses Citrus and Soy) for the Soba and mushrooms, one whole Lime juiced, Ponzu, sugar

Mushrooms, garlic and ginger done on the stove top and set aside

Tuna seared quickly and very rare in the center then the shrimp on the Hibachi

I had made Japanese Marinated Eggs ( Soft boiled and in Soy, Mirin, Sugar) earlier in in the fridge all day. Thin sliced radish, Jalapeno too.

All together in a magical dish of flavor. Soba Umami

Great friends, great food and a lot of Saki. It was a great day.

WOW!!! Bill you sent that one out of the park. Fantastic job and that plated pic is a million dollar shot.
 
Bill steps up to the plate, bases loaded, & pings one into the scoreboard at centre field. That soba looks better than anything I had whilst in Japan.
If that tastes anything like it looks………phtt no contest.
