I'm doing a traditional stuffed turkey in the oven.
Half shank ham on the WSM.
Kugela, baked sweet potatoes and asparagus.

I'll be spinning a bone-in turkey breast on the Kettle. Others will take care of additional menu items :)
 
I have a chunk of ham that I threw in the oven last night. It came out good but I'm thinking about cutting a few thick slices off and giving them a little barbecue/grill char sear tommorow. Plus some as of yet undetermined things to go with it. It's a little weird since we usually have a small to medium family gathering for Easter, but we aren't really able to do that now.
 
I'll be spinning a turkey on the Performer. I know one of the sides will be mashed potatoes. Maybe califlower in a CI skillet on the Genesis and one other veggie.
 
Doing Mediterranean style racks of lamb for my dad, brother in law and nephew. If I have time today yet I will make some fresh pasta and bring a tub of previously made Bolognese for a first course or instead my wife will give me a fresh baked loaf of french bread. Also grilling asparagus. If no pasta the I will also grill/bake some potatoes as well
 
6-12" of snow forecast here by tomorrow morning (it's been coming down since 6:00 AM already) and 30 mph gusts predicted. I rather doubt I'm setting foot outside. Just a good basic chili & cornbread for dinner.
 
We had boneless leg of lamb marinated in evoo, balsamic, minced garlic and oregano, rotisserie cooked on the WSM, asparagus grilled on the Genesis and Caesar salad with homemade dressing. It was a yummy end to a stressful day (DW cut my hair and I colored DW’s hair ;)).
 
I made burnt ends and smoked some sausage and my wife made mac n cheese. We kept it pretty simple. We had no family over this year.
 
Bought the special rack of lamb (2 of them) from Aldi Wednesday, and cooked them for myself, dad, brother in law and one nephew yesterday. Along with mushrooms, grilled asparagus, a nice salad and wife made fresh french bread loaves for me to take with. All of it delicious
I made a wet rub of fresh garlic, about 1/2 tsp turmeric, red chili flakes, black pepper, 1/2 tsp cumin, and zest of one lemon with a little EVOO. I cross hatched the fat cap and rubbed that in very well, wrapped in plastic in the early morning. By the time I had the grill ready I seasoned them lightly with some coarse kosher salt. I kept salt content low due to some issues with for my 93 yo dad's sake. Bottom line though there was so much flavor from the other ingredients more salt was not needed at the table. It turned out great! Just plain cheesecake topped with a few graham cracker crumbs.

Bob, we've made the basic cheesecake recipe in the IP and really enjoyed it. Next up is this one haven't tried it yet but I think it will be great.

Instant Pot Oreo Cheesecake





Ingredients

For the crust

Cooking spray

16 Oreos, finely crushed (about 1 1/2 c.)

3 tbsp. melted butter

Pinch kosher salt



For the cheesecake

2 (8-oz.) blocks cream cheese, softened

1/2 c. granulated sugar

1/4 c. packed brown sugar

1/4 c. sour cream

2 large eggs

1 tsp. pure vanilla extract

1/4 tsp. kosher salt

1 tbsp. all-purpose flour

10 Oreos

Whipped topping, for garnish

Crushed Oreos, for garnish

Chocolate syrup, for serving

Directions



Make crust: Grease a 6" springform pan with cooking spray. In a medium bowl, combine Oreo crumbs, melted butter, and salt and mix until mixture is the texture of wet sand. Using a glass, press mixture evenly into the bottom and up the side of the pan. Freeze for 20 minutes.

Meanwhile, make cheesecake: In a large bowl using a hand mixer, beat cream cheese, sugars, and sour cream until light and fluffy. Add eggs, one at time, and beat until just blended. Don’t overmix. Add vanilla, salt, and flour and beat until combined.

Crush 10 Oreos with your hands and fold into the cheesecake batter. Pour batter into springform pan on top of crust and bang pan on countertop a few times to tap out air bubbles in the mixture. Tightly wrap entire pan in two layers of foil.

Pour 1 cup water into Instant Pot and place trivet in the bottom. Fold a large piece of foil (about 18”) into thirds to make a long “sling,” and lower it into the pot. Put the springform pan on top and fold the sling.

Lock lid and set to Pressure Cook on high for 37 minutes. Let pressure naturally release 10 minutes, then follow manufacturer’s guide for quick release, making sure to wait until cycle is complete before unlocking and removing lid.

Remove cheesecake from the pot using sling, unwrap and discard foil, then place on a wire rack to cool for at least an hour. Refrigerate for 4 hours or up to overnight.

To serve, dollop whipped topping on cake and top with more crushed Oreos. Slice and drizzle each slice with chocolate sauce.
 
Barb and I weren't going to do anything special, but Fry's had Kroger spiral cut hams on sale for $1.19 lb. So I decided to get one. That and an acorn squash and a yam made up diner. Squash and yam done on the gasser and the ham in the oven. We both agreed that the ham was excellent very nice flavor, tender and not too salty.
 
We made a 9# spiral ham that Kroger had on sale for 99 cents a #. There were 3 of us so we will be eating ham all week.:D
