Got this recipe a few years ago from Morgan. Love these things and with football getting in full swing and dog days of baseball winding down I decided to restock. Here goes.

6 lbs. of freshly ground beef.

The ingredients. TQ, garlic powder, onion powder, pepper, ground corriander, dry mustard and cayenne.

Mixed and in fridge overnight.

Stuffed.

Hung for about an hour.

On smoker @ 180. Pecan for smoke.

Took about 5 hours to reach 160 IT.

Bring on the games.

Those looking great Cliff, Wonder what ever became of Morgan haven't seen him post in quite awhile.
 
Thanks Bob! Tell him Hi. Used his recipe as a refresher which calls for 2 lbs of meat. They were gone in a flash. Then I decided to triple the recipe (this post). Still not enough. They’re that good.
 
I was wondering about the recipe as I didn't see any cure mentioned.

Those look great Cliff, nice work. Now that the monsoons and heat are winding down. I've got to try that, got Barbs KA and the grinder attachment and the stuffing attachment so I'm out of excuses. What I don't have is a hanging rack for my 18.5 WSM, but I can fake it some how.
