Smoked USDA Prime Rib Roast for Christmas

Hi fellow TVWBB members,

I hope everyone had an enjoyable Christmas filled with good food and fun times with all your families. Here are some photos of my family's Christmas dinner, a boneless USDA Prime rib roast from Costco...


A couple pictures of the uncooked roast, followed by a couple of action shots. The roast was dry brined with kosher salt a few days before cooking, then seasoned with fresh ground black pepper, granulated garlic, and granulated onion before going into the grill. The cook was done on the Performer using lump charcoal as the fuel and pecan wood for smoke. Cooking temperature was 250°F, with about a 3 hour cook time until the desired internal temperature reached 130°F.



Here are some photos of the rib roast resting after being pulled from the grill, plus some plated shots of the sliced prime rib right before serving. The family was happy with the results - the roast was a nice piece of meat to begin with, so my job was simply to not mess it up :).
