Picked up some spares to throw on the Jumbo Joe. Rubbed one slab with Salt Lick, the other with Bad Byron's.
On they go with a couple chunks of cherry wood. One of my favorite woods to use with pork.
Needed to kill some time while the ribs cooked, so we made some spring rolls to munch on while we wait.
Ingredients cut up and ready.
Mixed in with some noodles.
Meat added.
Back out to check on the ribs. The middle of the lid seems to be a hot spot, so I covered it with foil so it wouldn't burn.
Time to roll.
Forgot to take a finished shot of them rolled, I blame it on the booze. I'll get one next time we do this.
Fried and ready to eat. Served with a sweet and sour sauce.
Had all the rolling stuff out so decided to add some bananas as well. Topped with some maple syrup and a bit of confectionate sugar. These bananas were a tad ripe for this, so a little soft, but still great nonetheless.
Ribs foiled around 2:45. Drizzled with maple syrup and sprinkled with brown sugar, wrapped tightly.
After foiling for about 30 minutes, bones starting to pull back, and starting to pass the tong test. Once unfoiled, I fully opened the bottom vent and ran it for another ~15 minutes to firm up the outside.
