I have been cooking a lot of beef lately and my wife wanted something "different"... So last night was chicken! I got some inspiration from Robert's post (http://tvwbb.com/showthread.php?54862-Simple-Chicken-Dinner) on his "Simple Chicken Dinner".
Chicken
I put the chicken into a brine for about 4 hours (water, 1/2 cup kosher salt, 1/2 cup brown sugar). Normally it would have been overnight, but time was limited.
Mix the apple, onion, lemon, garlic, and rosemary into a bowl with olive oil. When the chicken is ready for the grill rub with olive oil for crispy skin, add the dry rub after and stuff the mixture into bird.
Cheesy Campfire Potatos
Stuffed and Rubbed Chicken (Karbach's Hopadillo (Houston, TX) to drink )
Bird going on the smoker (still dialing in my heatermeter)
Campfire potatos before
Campfire potatos after
Bird done after ~4 hours @165
