Smoked chicken with Campfire Potatos

I have been cooking a lot of beef lately and my wife wanted something "different"... So last night was chicken! I got some inspiration from Robert's post (http://tvwbb.com/showthread.php?54862-Simple-Chicken-Dinner) on his "Simple Chicken Dinner".

Chicken
  • 5lbs Chicken
  • Apple (cut into cubes)
  • Onion (cut into cubes)
  • Lemon (cut into cubes)
  • Garlic
  • Rosemary
  • Savory Spice Shop "Native Texan BBQ Rub"

I put the chicken into a brine for about 4 hours (water, 1/2 cup kosher salt, 1/2 cup brown sugar). Normally it would have been overnight, but time was limited.

Mix the apple, onion, lemon, garlic, and rosemary into a bowl with olive oil. When the chicken is ready for the grill rub with olive oil for crispy skin, add the dry rub after and stuff the mixture into bird.

Cheesy Campfire Potatos
  • 6x Yukon gold potatos
  • Bacon
  • Onion
  • Cheddar Cheese
  • Seasoning Salt
  • Black Pepper

Dave, this is a really cool cook. I've never stuffed my bird, but like the mixture you used.

What temp were you cruising at for 4 hours? That's a pretty bird.
 
Very nice looking bird and taters. In fact, I'm going to have to do some of those taters when I go camping next month.
 
That is one fine looking chicken and tater look really good too!!! Your gnome looks like its got a black eye, we are only 2 games into the season!
