Really nice thread Bob. I'm at work on a Saturday, Sunday, Monday and Tuesday:mad:.

now it's hovering around 215..I have 2 bottom vents open and the one that's facing the little breeze we have outside is closed almost all the way...the top vent of course is wide open...

any suggestions
 
do I need to open the one facing the breeze and close down the others some?

I had all 4 vents wide open for a little while and didn't seem to do a thing to it

Hey Chuck...the one thing I've learned is that when it's new, you'll kind of be chasing temps a bit. The other thing I've learned is that my smoker settles in where it wants to settle in and I kind of don't fight it. Today, that seems to be 260.

That's probably not much help. Haha.
 
You can try that, Chuck. You may be getting an ash build up. Not sure what charcoal you are using.

You can also open up the door for a while to let the fire get going better, but if the coals look choked with ash, close the cover vent and give the smoker a little kick or use a poker the stir the coals. If you have water in the pan, be gentle.

By shutting the cover vent, the bulk of the fly away ash will come out the door.

I kicked it a couple of times before I foiled the ribs...and I do have water in the pan also...I'm using KBB...I might try to open the door and get the heat up some...it's up to 220 now

assuming my temp gauge is like everyone else's lol, it should be 250 at the grate, but you know what they say about assuming
 
Nice thread Bob, my gathering is tomorrow but I'm in the prep stage as the smoker will fire up between 8 and 9 tonight (so I think I qualify for smoke day) If all works out my 9.8 lb shoulder should be ready just after noon. all other work is done, nice to see all the fun and BBQ out there. Keep safe my friends

Yes, it is likely running hotter at the grate. I think you will be fine.

Also, if you do close the top vent and give it a kick, be sure to open the vent back up after. I may or may not have made that mistake!:eek: :o
 
My temp had dropped to 225, gave it a little dance/bounce and it's back up to 241.
Thought my butt was going out of the stall, thought wrong.

Ralph that's looks great man...I'm gonna build one of these when I replace my Smokey Joe with a Jumbo Joe...I look forward to the build thread...

also, then Rangers might just pull it off again in 2014 :D
