1/2 small chimney of lump, 2-3 chunks Hickory ribs on 1 p.m.#5 with some addititonal ingredients, foiled ribs at 3 p.m. after 2 hours in smoke.


They finished at 5 hours at about 230 steady. I'm a big fan of Smithfield products and these were very good, however I added apple juice to the foil and I won't be doing that again as I could taste a bit of a tang I didn't like on the finished product. Sauced them and they were great! :-)

Five hours on that dab of charcoal?

Rusty, I added two big fist sized chunks at the 3 hour mark when I took them out of the foil. I have an insulated cooker, charcoal is not an issue.
 
If there is anything better than properly smoked ribs, the Good Lord kept it for himself! Those look GOOD-D-D!

Nice looking ribs . I'm also a fan of Smithfield products , although I tend to buy what is on sale. And the recipe for the #5 sauce is probably my favorite thing I've learned on this forum. Great looking cook,brother.
